Overview

Marché was born out of a personal realization: truly clean, nutrient-dense food should not be difficult to access. While navigating her own health challenges, founder Nico Doniele Scegiel turned to organic, whole foods as part of her healing journey. Through that process, she discovered both the profound impact of clean, responsibly sourced food and the difficulty of consistently finding it in the modern food system. At the same time, many regenerative and small-scale farms struggle to reach consumers through traditional retail channels. Marché was created to bridge that gap—combining a modern organic market, café, and gourmet prepared foods with direct partnerships with regenerative farms to make truly clean food more accessible while supporting healthier food systems.

Traction

as reported by the founder

Marché has begun validating demand through curated dining experiences, catering, and community-driven food events. Founder-hosted private dinners priced at approximately $250 per guest consistently sell out, demonstrating strong consumer demand for premium organic dining experiences. In addition, Marché produces curated events and catering activations throughout the year, generating approximately $3,000–$10,000 in monthly revenue without any marketing spend. These early activations have helped build a loyal customer base, strong community engagement, and relationships with local regenerative farms—providing early validation for the Marché concept ahead of opening its first physical market.

What problem are you solving?

Consumers increasingly want clean, organic, and nutrient-dense food, yet there is a major gap between local farmers and everyday access for consumers. Farmers markets offer high-quality products, but they are limited to certain days and locations, and most grocery stores rely on large industrial supply chains. At the same time, there are very few places where people can consistently find hot, ready-to-eat organic food made with high-quality ingredients. Marché bridges the gap between regenerative farms and modern consumers, combining an organic market, café, and chef-driven prepared foods so people can easily access fresh, responsibly sourced food every day—not just at the farmers market.

What is your moat?

Marché’s competitive advantage comes from the combination of direct regenerative farm partnerships, hospitality-driven community, and vertically integrated food production. While farmers markets provide high-quality local food, they are limited in accessibility, and traditional grocery stores rely on large industrial supply chains. Marché bridges this gap by offering a curated organic market, hot chef-driven meals to go, and direct sourcing from regenerative farms. In addition, Marché is developing a technology-driven container farm system to grow produce locally and year-round. This vertical integration strengthens supply reliability, ingredient transparency, and margins while reinforcing Marché’s commitment to regenerative and nutrient-dense food. Together, these elements create a differentiated food ecosystem that is difficult to replicate.

What is your market size?

The U.S. gourmet market sector is valued at approximately $523 billion, driven by growing consumer demand for higher-quality, organic, and specialty foods. Within this broader category, the organic food market alone exceeds $70 billion and is projected to reach $144 billion by 2032, growing at approximately 10.3% annually. In Central Texas, the addressable organic food market represents approximately $2.4 billion today, projected to grow to $4.8 billion by 2032. Within Austin, Marché is initially targeting a serviceable market opportunity of approximately $10.5 million, with the potential to scale to $36–$60 million as demand for premium organic grocery, prepared foods, and regenerative agriculture continues to grow.

Who are your competitors?

Marché operates at the intersection of premium organic grocery, prepared foods, and hospitality-driven dining experiences. Key competitors include Central Market, Sprouts, Natural Grocers, Tiny Grocer, Swedish Hill Bakery, and The Well in Austin. While these businesses serve parts of the organic and wellness market, none combine direct regenerative farm sourcing, hot organic prepared foods to go, curated market retail, and community-driven dining experiences in a single concept. Marché is designed to bridge the gap between the farmers market and everyday access, creating a destination where consumers can shop, eat, and connect with truly clean food sourced directly from regenerative farms.
